In the spirit of Halloween, I prepared this pumpkin-shaped pasta with a creamy vegan pumpkin sauce and sautéed veggies! This fall-shaped pasta is made with butternut squash and can be found at Trader Joe’s. If you don’t live near a Trader Joe’s, feel free to serve this pumpkin pasta sauce with a pasta of your choice! This pumpkin pasta dish is the perfect fall comfort food and only takes 30 minutes to prepare. This recipe makes enough pasta for 2 entrée servings or 4 side servings.

⚡️Fun Fact: Pumpkin is an excellent source of vitamin A. Vitamin A helps your eyes and skin stay strong and healthy. As an antioxidant, vitamin A can help you lower the risk of some diseases and fight signs of aging.

Sauce Ingredients:
🎃 2 cups (450 g) canned pumpkin puree
🎃 2 cloves garlic, minced
🎃 2 tsp olive oil
🎃 2 Tbsp flour (I used chickpea flour)
🎃 1 cup almond milk
🎃 1/2 tsp sea salt
🎃 1/3 cup nutritional yeast
🎃 1/4 tsp red pepper flakes (optional)
🎃 1/4 tsp pumpkin pie spice (optional)

Instructions:
1️⃣ Boil 10 oz. of the pasta of your choice. Once cooked, drain it and set it aside.
2️⃣ Heat the olive oil, minced garlic, and red pepper flakes in a saucepan over medium heat. Sauté until the garlic is tender (~2 min).
3️⃣ Add the flour to the saucepan, and whisk until thickened.
4️⃣ Gradually whisk in the almond milk. Bring to a boil and then reduce the heat and simmer until thickened (~2-3 min).
5️⃣ Add the pumpkin purée, salt, and pumpkin pie spice. Stir until combined.
6️⃣ Combine the creamy pasta sauce with the cooked pasta, serve, and enjoy! 😊
Optional: Serve your pasta with sautéed vegetables (ex. Red peppers, onion, zucchini) and/or a sprinkle of your favourite cheese!
